Snow Pea Sprouts
Some say it's because they sprout very early in the spring and occasionally get caught in a late spring snowstorm that they are so named
They are delicate lush green shoots with a smooth white to light green crisp stalk. Ideal for salads, sandwiches and stir fries. Snow Pea Sprouts are grown from pea seeds and are traditionally used in Asian cuisine as a garnish.
FACTS:
Snow Pea Sprouts are high in protein and provide a good source of calcium vitamin B1, C, and niacin. The pea is rich in compounds that may help prevent cancer in animals and helps lower blood cholesterol
SERVING SUGGESTIONS:
The firm but tender new shoots of the snow pea plant, these sprouts are eaten raw, steamed, stir-fried or added to soups.
Mixed Bean Sprout and Cabbage Salad 100g Snow Pea Sprouts
150g Bean Sprouts
500g shredded cabbage
2 small onions chopped finely
1/4 cup finely chopped mint
1/4 cup extra virgin olive oil
Juice of 1 lemon
Salt and pepper to taste
Blanch Snow Pea Sprouts, slice into shorter lengths, drain well. Mix all vegetables together in a bowl. Separately mix remaining ingredients and pour over salad.
